birthday cake

If you've been to a birthday party at our house anytime since the boys have been around, this is THE CHOCOLATE CAKE that I make for birthday cakes and cupcakes. It's always a hit and I believe my little family is addicted to them. Make it: it's dense and rich and take a look at how much fat is NOT in it. I tried freezing cupcakes of this recipe and still they were moist and dense and delicious! Enjoy!

Super Chocolate Cake (from The Best of the Best, and More)

1 cup white sugar
3 tbsp butter, room temp
1 egg, beaten
1/2 cup cocoa, fill with boiling water to make 1 c of liquid
1/2 tsp baking soda
1/2 cup boiling water
1 cup flour
1 tsp baking powder

1. Cream sugar and butter; add egg and cocoa liquid.
2. Mix soda and boiling water; add this and flour, baking powder and mix well.
3. Pour into greased 9" square pan (batter is thin).
4. Bake at 350 F for 30 min or until toothpick inserted in center comes out clean.

*This cake doubles well: bake in a 9X13 or bundt pan for 40-50 min.
*Makes 1 dozen large cupcakes: bake for 17-20 min.
