pizza boy

On the weekend that Uncle Kyle visited, we made pizza and Logan had his first crack at helping me make the dough. I'm not sure if he was invited but he certainly made himself at home. You have to admit, Logan does look like he knows what he's doing. Maybe he has inherited Opa Buikema's bread making skills?

and lick the dough (notice wet divot at top). He went in for another lick but I stopped him before he made contact. We DID have a guest, even if it was family!

DeHaan Pizza Dough

In a large bowl combine: 1 tbsp quick rise yeast, 1/2 tsp honey and 1 cup warm water.
Let rest 20 - 30 minutes until foamy and yummy smelling.

To this yeast mixture add:
2 cups flour (we like no more than 1/4 whole wheat)
a generous tsp salt
fresh ground pepper
2 tbsp olive oil
2 - 3 tsp dried herbs (use your imagination: I've put in 1/2 cup of parmesan cheese, fresh minced garlic, minced sundried tomatoes. This dough is forgiving!)

Stir until it forms a dough ball. Knead on floured surface until smooth and elastic. Add more flour as necessary. Depending on where you live and the weather you made need more or less each time. Dough is always fabulous on calm days!

Let the dough rest while you prepare your toppings (10 minutes)

Roll out and place on parchment-lined or cornmeal-scattered pizza pan. We make one large cookie sheet with this recipe for crust that is not thin or thick. If you have time, let rest 5 - 10 minutes on the pan before topping.

Once "topped" place in hot oven immediately so the crust does not get soggy from your sauce. Bake at 400 degrees for 20 to 25 minutes depending on how heavy your toppings are.
